kaju draksh shrikhand

                         KAJU DRAKSH SHRIKHND
Shrikhand is Indian dessert recipe.It has a combination of curd,sugar and dry fruits.This recipe is very suitable for summer.we can serve this recipe to our guest.We make this recipe at home so it is very healthy and hygienic compare to market.
INGREDIENTS:
1 L - Full fat milk
1 Tb -butter milk
2 Tb - kaju
2 Tb -kismiss
3 Tb - warm water
3/4 c - powder sugar
vanilla essence
METHOD:
First luck warm milk then add buttermilk into it.cover it and keep it aside for 8-9 hours.When our curd is set transfer it in cotton cloth make a knot and hang it or put it in strainer for 7-8 hours.In summer season keep this curd in fridge otherwise it will be sour.After 8 hours open the knot,now our hung curd is ready.Take big bowl add hung curd and sugar little at a time and mix very well,when sugar is completly mix add soaked dry fruit(i soaked it for 10 min)and essence(optional)mix it again.keep it in a fridge for 5 hours or until it's chilled.now our kaju draksh shrikhand is ready to serve.If you want to watch this recipe video you can watch it on my you tube cooking channel "shreejifood"or given linkhttps://youtu.be/1p0oyBfPdsI

surti khaman

                              SURTI KHAMAN
Surti khaman  is very popular gujarati snacks.This khaman is known as surti khaman,vati dal na khaman,chana dal khaman etc..Today i share a traditional  method of this khaman .This is tasty recipe.
INGREDIENTS:
1 c - chana dal
1/4 c - rice(any rice)
3/4 ts -citric acid
1/2 ts -turmeric powder
1 ts - salts start
1/2 ts -cooking soda
3-4 -green chilies
water if required
METHOD:
First mix chana dal and rice in a bowl,wash it 2 times then add 2 c water and soak it for 4-5 hours.After 5 hours drain access water.Take a medium size mixer jar add chili,citric acid, turmeric powder and half chana dal grind it without water,when it has a course sooji texture add 1-2 tb water and make a fine paste.same way grind another half chana dal.mix it both.cover it and keep it any warm place for 5 hours.boil water in a steamer at the same time in a chana dal mixtue add salt and soda and mix it well.please mix it only one side for perfect result.Take a aluminium mold for khaman apply some oil then add our khaman batter .when water is start to boiling keep this mold in it .Steam it for 15 -17 min.on mid.flame.then switch off the flame.Let it cool down,unmold it and cut it .
FOR TADKA:
4-5 Tb - oil
3-4 green chili
1/2 ts - turmeric
1 Tb - mustered seeds
1/2 ts - cumin seeds
1/2 Tb - sesame seeds
few curry leaves
METHOD:
First take oil in a pan,when oil is hot add mustered seeds,cumin seeds and chili.then add turmeric and sesame seeds and curry leaves.now we add cut khaman and mix it.for garnishing add some chopped
