dates and tameraind chatni||mithi chutney

This sweet and sour chutney blend spruces up almost 
all chaat recipes. The addition of jaggery makes the chutney sweeter, but you may omit it if you prefer a more tangy flavour. An essential accompaniment to most chaats, this chutney can be stored refrigerated for upto a month and deep frozen for more than 6 months.we use this chutney in upvas and fast also.we serve this chutney with samosa,kachori,sabudana vada etc...I always store this chutney in a freezer,so i easily make any recipes for my kids like bhel,sevpuri,dahipuri etc....
INGREDIENTS:

1/4 c imli ( temrind)
1/2 c khajur ( dates)
1/2 c gud (jaggery)
1-1/2 c water
salt to taste

Green Tikhi chutney

                         HARI TIKHI CHUTNEY
This green spicy chutney is a great accompaniment with any Indian snack. Its made with green chilli and coriander leaves it tastes fresh and adds that zing to your snack. It can be served with absolutely anything, be it Samosas, Vada, Aloo bonda, sandwiches and different types of chats like panipuri,sevpuri,dahipuri etc...We can store this chutney up to 2-3 months in a freezer.I always store this chutney this way,so i easily make any recipe for my kids.This chutney recipe is very easy and quick.
INGREDIENTS:
1 c chopped coriander
4-5 green chillies
2 tb corriander steam
1 tb peanut
1/2 ts cumin seeds
1 ts lime juice
1 ts sugar
Salt to taste ( I used 1 ts)

Water (3-4 tb)

protein khichdi

                         HOW TO MAKE PROTEIN KHICHDI
Protein khichdi is very good combination of brown rice,oats and two types of dal.it very quick and tasty recipe.This recipe is very useful for weight loss.I use some vegetables in this recipe so you can say it's one pot recipe.we make this khichdi in a cooker.brown rice is very healthy compare to normal rice and oats helps to reduse weight.We use moong dal and toor dal which is good source of protein.If you want to loss weight so this recipe is very helpful to you.In our vegetarian diet we can't get propare protein,so if we eat this type of recipe once a week so it's very helpful to us.Today i do not add onion and garlic in this khichdi but if you want to add it, you can.
INGREDIENTS:
1/4 c brown rice
1/4 regular oats
1/4 c toor dal
1/4 c moong dal
1 tb oil
1 tb ghee
1 potato
1 small tomato
1/2 c frozen or fresh pigeon peas
1/2 tb green chilli paste
few curry leaves
1 bay leaf
1/4 ts hing
1 dry red chilli
2 ts red chilli powder
Salt to taste
1 ts termric powder
1/2 ts garam masala

2 c water
METHOD:
Mix rice and both dal wash it for 2 times with water then soak it for half an hour.take 3 liter cooker add oil in it,when oil is hot add mustered seeds and cumin seeds.then we add tarmeric powder and hing mix it add chilli paste and vegetable mixture and curry leaves.At this time we add our spices and mix it with oil.now we add dry oats.Drain water from rice mixture then add it in a cooker and add ghee in this , mix again.now we add water and make 4 whistle on mid.flame.when cooker cool down open the lid of a cooker and mix it once,if there is any moisture in khichdi don't worry after 5-10 min.it will be perfect.if you like lose khichdi you can add more water.We can serve this khichdi with homemade curd or buttermilk.If you want to see this recipe video you can watch it on my youtube cooking channel"shreeji food".I given link for this videohttps://youtu.be/IOksz3_GbMs

Dudhi ka halwa||Dudhi no halwo

                                 DUDHI KA HALWA
Dudhi halwa or lauki halwa - sweet indian dessert made from bottle gourd.Bottle gourd is known as lauki in hindi and dudhi in gujarati.so this indian dessert is known by the name lauki halwa or dudhi halwa.Dudhi halwa is very good combination of dudhi,milk,sugar and dryfruits.Today i share the same recipe of halwai.Some people make this halwa like gajar halwa but dudhi halwa method is completly different.All halwai make this halwa using this method.This recipe gives perfect texture to your halwa.you can make this halwa using khoya or without khoya.Today i make it without khoya.you can make this recipe on any festival like diwali,rakhi,bhai duj etc...
INGREDIENT:
1 kg - grated dudhi
200g -sugar
750 ml -full fat milk
2 tb - kaju
2 tb - badam
2 tb -raisin
1 tb - ghee
1/2 ts -cardemom powder
First take around 2 liter water for boiling,when it starts to boil add peel and grated bottle gourd.boil it for 5 min.then strain water and let it cool down.squeze access water from it.take nonstic pan or heavy bottom kadai. add ghee in a pan  when ghee is hot add boiled and squezed dudhi.mix it and cook it for 3-4min.then add milk,when milk is a half in a quantity at this time we add malai and milk powder then boil it compeletly then we add sugar(you can add sugar according to your taste)now cook this sugar at this time we add chopped dryfruit,cook it till we get perfect consestancy of halwa at last we add 1 ts ghee it gives nice shine to our halwa.don't over cook this halwa.you can watch this halwa recipe on my youtube cooking channel"shreeji food".and i given link for this video.https://youtu.be/fD1yEeVsFgg

pavbhaji recipe

Today i share pavbhaji recipe,in this recipe i don't use onion and garlic still this pavbhaji very tasty and flavourful.this pavbhaji taste is same like restaurant.if you are jain you can use boiled raw banana instead of potatoes.pavbhaji is very good combination of vegetables.kids don't want to eat vegetables but when you serve that same vegetables in this types of recipe so they love to eat.we can give this recipe in kids lunchbox.my kids like pa vbhaji so i share that same recipe with you.we can make bhaji in a oil or butter,but if you like spicy pavbhaji so make a bhaji in a oil.this is very quick and easy recipe.this recipe is very suiteble for get to gether and birthday party.
  INGREDIENTS:
1 kg potato
1-1/2 c chopped cabbage
1 c chopped tomatoes
3/4 c chopped capcicum
1/4 c chopped coriander leaves
2 tb green chilli paste
4 tb oil
1 ts termric powder
2 tb red chilli powder

1 tb pavbhaji masala
Salt to taste
For tadka:
2 tb oil
1/2 ts red chilli powder
1/4 ts garam masala

 Today i make dalfry same like restuarant,in this recipe i don't use onion and garlic still it is very tasty.if you are jain or swaminarayan so this recipe is very useful to you.dal is very good sorce of protien.dalfry is very quick and easy recipe.we serve this dalfry with jeera rice because dalfry and jeera rice is very good combination.i love it.so share that same recipe with you.i hope you like my recipe.

1/2 c toor dal
1. 1/2c water
1/2 c chopped tomatoes
4 chopped green chilli
1 tb oil
1 tb ghee
1/2 tb cumin seeds

1/2 ts Punjabi garam masala
Salt to taste

    Rose milkshake recipe
 Rose milk is a absolute favorite one among kids..They go crazy for this..So i thought this drink recipe..Hence this post...The other cool thing is you can make the syrup in bulk and store in fridge and use it whenever you want.This is very quick and easy recipe for summer..we can serve it to our guest also. When we serve it cool,it taste so nice.Today i make this milkshake in mixer so it gives perfect taste like restaurant.
INGREDIENTS:   
2c - chilled milk
2 tb -rose syrup
1 tb - vanilla ice cream
4-5 - ice cubes
METHOD

gajar ki kheer

           carrot pudding||gajar ki kheer
carrot pudding or gajar ki kheer is very delicious dessert recipe made from grated carrot,milk,sugar and dry fruit.carrot pudding is similer taste of carrot halwa.this is very easy recipe.we can serve this recipe hot or cold according to season.
INGREDIENTS:
1 c grated carrots
500 ml full fat milk
3 tb sugar
1 tb malai or milk powder
1 tb kaju
1 tb Almond
1 tb pista
1/2 ts cardemom and nutmeg powder
1/2 ts ghee
method
first peel and grate carrot.you can grate it manually or using food processor.i used red carrot.now take ghee in a nonstic pan,when ghee become hot add grated carrot mix it and cook it for 4-5 min.now we add milk,when milk start to boiling then we add sugar(you can add sugar according to your taste)and malai or milk powder.boil it for 5 min.at last we add cardemom  and nutmeg powder.add some chopped dry fruits.you can add some badam and pista for garnishing.you can watch this recipe video on my cooking channel shreeji food.https://youtu.be/fBPNN3tPok4 

spicy broken wheat khichdi

DALIYA KHICHDI FOR WEIGHT LOSS
vegetable daliya khichdi is a healthy one pot meal.broken wheat is generally called as daliya in north.broken wheat is used in india for making many sweets as well as savory dishes.daliya is considered to be one of the simplest and healthy food,low in fat and cholesterol,high in iron and fiber.so today i share one healthy daliya recipe with you.it is very easy to make and very tasty.this recipe is very useful for weight loss.
INGREDIENT;
3/4c -broken wheat(daliya)
1/4c -toor dal
3c - water
1/2c - cut potato(i used with it's skin)

1/4c - green peas
1 - chopped tomato
2 - green chillies
8-10 -curry leaves
1 - dry red chili
2 tb - oil
1 tb - ghee
2 ts - red chilli powder
1 ts - termeric powder
1/2 ts - garam masala
1 ts - mustered seeds
1/2 ts - cumin seeds
1/4 ts -hing
salt to taste
mix broken wheat and toor dal and wash it 2 times with water and soak it for half an hour.take oil in a cooker,heat oil on med.flame when oil is hot add dry red chilli,mustered seeds,cumin seeds,termeric and hing mix it then add potato,peas,green chilli and curry leaves mix once.now we add our spices at this time for make our khichdi tasty and flavourful.cook it for 1 min.now drain water from daliya mixture add it in cooker mix with veg.mixture then add 3 c water.at last we add ghee mix it again.make 4 whistle on med.flame.when our cooker completly cooldownv.open the lid and mix khichdi once.now our daliya khichdi is ready to serve.you can serve this khichdi with homemade curd or butter milk.you can watch this recipe video on this linkhttps://youtu.be/HJM6ENJ9rFw

sev usal

sev usal // Indian street food recipe.
Today i share with you one Indian street food recipe which name is SEV USAL.sev usal is spicy recipe and it serve with spicy red,green chatni and soft gathiya.also serve mini pav or bun with it.this recipe is very famous in vadodara(gujarat)
if you like spicy Indian food so you definitely like this recipe.
INGREDIENTS:
For sev usal:
3/4 c dry green peas
1 c tomato puree ( I add some corriander leaves in it)
1/2 c boiled and mashed potato


1 tb green chilli paste
1/2 c fresh corriander
5-6 tb oil
1ts -termric powdersev
1. 1/2 tb corriander cumin powder
2 tb red chilli powder
1 tb sev usal masala
1 ts garam masala
1 tb besan
 Salt to taste
1-1/2 c water
For red chatni (tari)
1 tb oil
1 tb Kashmiri red chilli powder
1/4 ts termric powder
1 ts corriander cumin powder
1/4 ts garam masala
1 ts sev usal masala
1/4 ts salt
2-3 tb water
For garnishing:
Tomato
Fresh corriander
Green chatni
Tari
Gathiya
MAKING PROCESS:
soak dried peas in normal water for 4-5 hours.then add it in cooker for boiling at this time we add potato,salt and pinch
of turmeric powder with peas,take enough water(around 1-1/2 c)and make 4-5 whistle on mid.flame.take oil in pan when oil
become hot turmeric and chili paste mix it now we add tomato puree(it you want add onion and garlic you can add along
with tomato) and spices. when oil is released from puree at this time we add boiled peas mixture mix it add enought water
for boiling.after 4-5 min.our sev usal is start to boiling now we add besan(mix it with 2-3tb water)sev usal masala and
garam masala again boil it for atleast 15-20 min.now turn off theflame and add fresh corriander leaves.
for tari(red chatni)
add oil in a small pan,mix all spices in bowl mix it with 3tb water.when oil is hot now we add spice mixture and cook it
for 1-2 min.
SERVING:
take sev usal in bowl add red and green chatni,chopped tomato(you can add onion also),fresh corriander and gayhiya.serve

gajar ka halwa

             HOW TO MAKE PERFECT GAJAR HALWA AT HOME

carrot halwa or gajar halwa 
           during winter,we make gajar halwa often.its a popular dessert in north india during winter. we make many dishes with carrots.
          we generally use red carrots to make halwa as they are tender and juicy.i also used red carrots to make this halwa but you can use any carrots for making halwa.this traditional recipe uses just full fat milk,ghee,sugar and dry fruit to make the halwa.you don't need khoya(mawa) or condensed milk. to make carrot halwa ,it is important to buy tender,juicy and fresh carrots so they are easy to grate.
  1.        you can grate carrots manually or in a food processor.obviously the food processor makes grating the carrots easier.i suggest to use a heavy bottomed kadai or non stick  pan to make halwa.

sabudana vada

HOW TO MAKE CRISPY SABUDANA VADA.
Sabudana vada, also called 'sago vada', is a traditional deep fried farali snack. It is often served with spicy green chatni and along with hot tea or coffee and is best eaten fresh.In other parts of the country, Sabudana vada are the best option to have when fasting. Therefore, this filling and nutritious snack is served usually during religious festivals and during fast/vrat/upvaas especially in Navratri vrats. these are best eaten fresh. Sabudana vadas are crunchy and "melt in the mouth.we make so many recipes from sabudana(sago)like sabudana vada,sabudana khichdi,sabudana khee,sabudana chevda etc....
           prepration and recipe for making vada:
     ingredients:

   1c-sabudana 
   5midium size boiled and mashed potatoes
   1/4 to 1/2c roasted and crushed peanut
   1/4 c - fresh coriander chopped
    3-4 ts- powder sugar
    1tb- lemon juice
   2 tb- green chilli paste
   1/2tb- red chilli powder
   1/2tb-coriander cumin powder
   1ts- termeric powder
   1ts- garam masala

   to soak sabudana overnight.take enough water to cover sabudana.remove access water otherwise sabudana will soggy.next day mix sabudana and boiled potatoes and other ingredients.then make small round ball.heat enough oil for frying vada.when oil is hot add 4-5 vadas at a time,don't add vadas in a large contity otherwise vada will break in oil.always fry this vada on midium flame so that our vadas are very crispy from outside and soft from inside.this vada recipe is really very easy.we can give this vada in kids lunch box https://youtu.be/Wrz-xQr3xNU
